Spinach Quiche

Veggie lovers and meat lovers alike will fall head over heels for this hearty quiche! You'll want to make this gluten-free spinach quiche a weekend brunch staple.

Ingredients

  • 1 sheet of Geefree Puff Pastry Dough

  • 1 package of frozen spinach

  • 1 small onion

  • 4 ounces shredded monterey jack cheese

  • 2 ounces parmesan cheese

  • 4 eggs

  • 6 ounces heavy cream

  • salt and pepper

  • 6 mushrooms, sliced (optional)

  • 1/2 stick of butter

  • Additional Equipment
  • 9-inch pie dish

Directions

  • Preheat oven to 375°

  • In a sauce pan, melt butter. Cook onions and mushrooms until onions are translucent.

  • In a bowl, mix eggs, cream, salt, pepper, grated cheese, cooked onions and mushrooms, and thawed spinach.

  • Line pie dish with sheet of GeeFree puff pastry.

  • Pour mixed ingredients into pie shell.

  • Bake for 30 minutes or until firm.
