Veggie lovers and meat lovers alike will fall head over heels for this hearty quiche! You'll want to make this gluten-free spinach quiche a weekend brunch staple.
1 sheet of Geefree Puff Pastry Dough
1 package of frozen spinach
1 small onion
4 ounces shredded monterey jack cheese
2 ounces parmesan cheese
6 ounces heavy cream
salt and pepper
6 mushrooms, sliced (optional)
1/2 stick of butter
9-inch pie dish
Preheat oven to 375°
In a sauce pan, melt butter. Cook onions and mushrooms until onions are translucent.
In a bowl, mix eggs, cream, salt, pepper, grated cheese, cooked onions and mushrooms, and thawed spinach.
Line pie dish with sheet of GeeFree puff pastry.
Pour mixed ingredients into pie shell.
Bake for 30 minutes or until firm.
